Chicken Pasta Recipes – Pollo Pasta Arachide (Chicken Peanut Spaghetti)

Pollo Pasta Arachide (Chicken Peanut Spaghetti)

What you need:
1 lb. chicken breasts, deboned
Rock salt
2 tsp. garlic, minced
½ cup chunky peanut butter
1 tsp. ginger root, minced
1½ tsps. chili-garlic sauce
2 tbsp. soy sauce
1 carrot, julienned
1 cup broccoli
½ cup snow peas
½ cup toasted peanuts
8 oz. wheat spaghetti

What you need to do:
In a large stock pot, boil 2 liters of water for cooking spaghetti. In a medium saucepan, place the chicken breasts, cover with enough water and boil. Add some salt; reduce the heat, cover and simmer for about 15 minutes. When done, transfer to a plate and let stand to cool. In a large bowl, combine the garlic, chunky peanut butter, minced ginger, chili-garlic sauce and soy sauce.

Set aside.

Put the spaghetti in the large stock pot with boiling water and cook for 7 minutes.  Add vegetables and continue cooking until the vegetables and pasta become tender. Reserve a cup of the liquid and mix this with the peanut butter sauce. Drain and rinse the vegetables and pasta under cold water. Transfer to the bowl of peanut butter sauce and toss to coat well. This healthy dish can be served warm or chilled sprinkled with toasted peanuts.
