Easy Chicken Recieps – Chicken Breasts Ole
Prep Time: 20 minutes, Bake time: 45 minutes
What you need:
6 boneless & skinless chicken breasts
4 ozs. green chilies – diced
¾ cup cheddar cheese – shredded
¾ cup monterey Jack cheese – shredded
3 tablespoons onion – finely chopped
1/3 cup melted butter
¼ teaspoon chili powder
¼ teaspoon cumin
1 cup tortilla chips – crushed
What you need to do:
Preheat oven to 375 degrees. Begin by placing chicken breasts between sheets of waxed paper. Pound each chicken breast until ¼” thick. Next in a small bowl drain the chilies and combine them with the cheeses and onion. Divide mixture into 6 equal portions. Sprinkle one portion of the mixture on each chicken breast. Next assemble the chicken, roll chicken breast with filling inside. Fold in the ends of chicken breasts and secure with wooden toothpicks. In another small bowl combine the melted butter, chili powder, and cumin. Dip each chicken breast into the butter mixture and then roll into tortilla chips. Place chicken breasts with seam side down in a shallow greased baking dish. Bake at 375 degrees for 45minutes.
Serve chicken breasts with sour cream, taco sauce and Mexican Rice. For additional crunch add more tortilla chips on the top of baked dish.
