Andy’s Skillet Supper

Prep time: 20 minutes, cooking time: 30 minutes

What you need:
1 pound boneless/skinless chicken breasts (4 -5 pieces)
2 teaspoons canola or vegetable oil
1 medium onion chopped
2 teaspoons chili powder
½ teaspoon cumin
½ teaspoon crushed oregano leaves
½ cup chicken broth
1 ½ cups vegetable juice (i.e. V8)
19 ounces canned kidney beans
1 red, green, or yellow bell pepper diced (optional)

What you need to do:
Start by heating the oil in large frying pan. Cut chicken breasts into ½ pieces.  Add chicken to oil and brown on each side.  Add the onion, chili powder, cumin, and oregano.  Cook until chicken is brown on each side and juices run clear.  Stir in the chicken broth and vegetable juice.  Heat until mixture begins to boil and then reduce heat to low.  Cook on low heat for 10 minutes.  Stir in canned kidney beans with liquid.  Stir the dish, cover and cook for another 10 minutes. Serve over rice.
