Mexican Chicken -n- Rice

Prep time: 20 minutes, cooking time: 50 minutes
Servings: 8

What you need:
1 whole fryer chicken cut into 8 pieces
½ cup olive oil
¼ cup tomato sauce
1/8 teaspoon powdered saffron
1 small onion chopped
2 ½ cups chicken broth
1 garlic clove minced
1 cup uncooked rice
salt and pepper to taste

What you need to do:
First begin by heating the oil into large frying pan.  Brown chicken on both sides.  Next add the onion and garlic. Cook for a few minutes.  Stir saffron into chicken broth until dissolved.  Add tomato sauce and chicken broth. Cook for 20 minutes on medium heat.  Add rice and stir.  Season to taste with salt and pepper. Turn heat to low and simmer for an additional 30 minutes or until all liquid has been absorbed.
