Easy Dinners – Turkey Crudite Stir Fry
2 tablespoons high heat cooking oil
4 cups leftover raw crudite vegetables, any assortment
2 tablespoons minced garlic
2 tablespoons minced ginger
2 cups leftover cooked turkey
3/4 cup chicken broth
3 tablespoons soy sauce
1 tsp sesame oil
optional: sliced green onions and toasted sesame seeds for topping
How to make it:
Put in oil in a large frying pan and set over high heat. When the oil is already sizzling, turn down heat to medium high.
Then mix up onions, green and red peppers, cauliflower, broccoli, mushrooms, celery and any other leftover fresh and raw vegetables that you want.
Then put in the minced ginger and garlic and stir to combine well.
Continue mixing and stirring for about 3-4 minutes or up until the garlic softens and becomes fragrant and the vegetables are crisp-tender.
Blend in the broth, soy sauce and turkey. Cook at once and stir for another 3-4 minutes until the mixture is hot enough.
Then take it away from the heat and add in a small amount of sesame oil. Mix it up.
Finally, serve the crudite with Asian noodles or even rice. And if desired, put in sesame seeds and onions on top.
This recipe is good for 4-6 people.
