Easy Dinners – Chicken Piquant with Peppers
Chicken Piquant with Peppers (Serves 6)
What you need:
3 pcs. chicken breast
¼ cup olive oil
2 tbsp. olive oil
2 tsp. mustard
4 cups gin
4 cups flour
3 red peppers
3 yellow peppers
3 red onions
1 tsp. basil, finely chopped
¼ tsp. hot-pepper seasoning (liquid)
Salt and pepper to taste

What you need to do:
Split the chicken lengthwise. Deseed the bell peppers and slice if possible into squares. Season the bell peppers with salt and pepper. Peel and slice the onions thinly. Blend the mustard, basil, pepper sauce, and ¼ cup olive oil.
In a bowl, season the chicken evenly with salt and pepper. Add gin and flour; mix until the chicken is properly coated. Cook the chicken pieces along with the bell peppers in olive oil, under a medium flame.
Brush the chicken with the mustard mixture and bake in a preheated oven at 400°C for 15 minutes.
